Smoked Gin and Tonic

Ice cubes, 10-15 smoked

1 Lime, cut into 8 wedges

90 ml of Gin

Tonic water

1 slice of lime, thin, cut in half (for garnish)

To make the smoked ice cubes

  • place cubes in a bowl and cover with clingfilm.  Use your choice of woodchip in your smoking gun, light and fill the bowl with smoke; or
  • place ice blocks in a shallow tray and cover with clingfilm.  Fill the tray with smoke and leave until ice-blocks have melted.  Refreeze ice-blocks for later use.

Squeeze the juice from two wedges per glass, then fill the glasses with the smoked ice cubes and the rest of the lime wedges

Add the gin and top up with tonic. Garnish with half of the thin lime slice and serve immediately

Note:  You may need to experiment with the smoked ice to find the sweet spot for your particular balance of smoke infusion.
