The first school term has finished, Valentines Day is all but a vague memory and Easter is upon us. We are well and truly into the heart of the year and with it comes a shift in cuisine. Pastries and warm savoury dishes become more popular and desserts take on a heartier style.

Whilst we can become very distracted by the permission to eat chocolate at Easter time, don’t forget that Mother’s Day will arrive early next month. I don’t know about you, but Mother’s Day often creeps up and leaves me unprepared. Not this year! Now is the time to start thinking about gift ideas for mum. Whether it is something little and special from you alone, or something that is a joint gift from the family as a whole, mum will know that your thoughts, consideration and love have gone into whatever you choose.

The Control ┬░Freak

Precision cooker for cooking perfectly, every time.

One of the less desirable parts of cooking on the stove is having to constantly keep an eye on the food and regulate the temperature. There’s often no accurate way to monitor or adjust the temperature, so you just have to eyeball it. The Control Freak does this for you, consistently holding precise temperatures to within a single degree.

The Control Freak™ checks temperatures 20 times per second which allows for instantaneous adjustments that ensure precise temperature holding and the quickest recovery to a set temperature throughout cooking. Included is a probe that can attach to the side of a pot or saucepan to check the internal temperature too.

To make things even better, it’s programmable. Find the perfect temperature and time for cooking a chicken breast, then save the program and you’ll have it forever. Or, program a method into the easy-to-use display and you can boil a chicken stock overnight, slowly decreasing the temperature so that it doesn’t evaporate and burn.

With the high precision and active temperature checking, you can walk away from your Control Freak and never worry about the heat getting too high. You can also do sous vide with it – put a pot of water on top and the probe in the middle, and you’ll have yourself an accurate and programmable sous vide bath.

Quince – the Forgotten Fruit

Quince is a rarely seen fruit, especially in its raw form. Grown primarily in the Mediterranean, the fruit was traditionally a common accompaniment to game and used in pastries, pies and jams, but in modern times it often appears in preserves and dessert stews. By far the most common use is quince jelly, a fantastic platter piece or spread – it goes great on toast!

Quince is fairly inedible raw, but once cooked, a treasure trove of flavours are released. Despite their limited appearance in modern cuisine, the fruit is rather universal in its use – Quince may be poached, baked, grilled, roasted, stewed, pureed, jellied, sous vided, and more. It’s notable for its tart, bitter taste, but it makes a great base for fruit stews. Try poaching it in water or wine, but add plenty of sugar!

Make sure to remove the peel and the core before using the fruit, then cut up the flesh and cook it in whatever manner works best with your recipe. Quince can be used in place of apples and pears in just about anything, but extra time must be considered to allow the fruit to soften further.

There is a very simple answer to why we have used quinces in dishes worldwide for millennia; they’re delicious! Poach them, puree them, stick them in a stew – the often forgotten fruit really is a treat.
